Step cooking
Noodles
- In a deep bowl, break 1 chicken egg, add 0.25 tsp. salt and beat with a fork.
- Add 2 tbsp to the egg. l flour, mix with a fork until smooth, then add another 2 tbsp. l flour and stir with a fork.
- Sprinkle a work surface of 0.5 tbsp. l flour, spread the dough and knead it thoroughly by hand until elastic.
- We divide the dough into 2 parts, one of them is rolled out with a rolling pin into a thin layer with a thickness of not more than 1 mm, then in the same way we roll out the second part of the dough.
- With a knife, we cut both layers of dough into strips about 5 cm wide.
- Fold the strips on top of each other and cut into 5 × 0.3 cm noodles, slightly distribute them with your hands and set aside.
Meatballs
- We peel onion 1 onion and finely chop it with a knife. In a deep container, spread 400 g of mixed minced pork and beef, add chopped onion, 1 tsp. salt, 0.5 tsp dried garlic, 0.5 tsp mixtures of “Hops-suneli” and ¼ tsp. black pepper, then mix thoroughly with your hands.
- In the process of kneading, beat the minced meat a little, just throwing the mass into the container with a little force.
- When the stuffing is kneaded, we form balls of about 2.5 cm in diameter from it.
- Pour into the pan 4 tbsp. l sunflower oil and set to warm up on medium heat. When the oil has warmed up, put the meatballs in it and fry them on all sides.
- Peel 1 onion and finely chop. We peel 1 carrot and rub it on a fine grater. When the meatballs are fried on all sides, add chopped onions and grated carrots to them, mix everything with a spatula, reduce heat and fry with constant stirring until the onions become transparent, then remove the pan from the heat.
Soup
- Pour 2.5 liters of water into a 5-liter pan, put on a large fire and wait for the liquid to boil.
- We wash 5 potatoes under running water, peel them and cut into small rectangles. When the water has boiled, add chopped potatoes to it and wait for the liquid to boil again, after which we remove the foam that has appeared on the surface with a slotted spoon, reduce the heat and leave it to boil for about 5 minutes.
- After 5 minutes, add meatballs with vegetables to the pan, increase the heat until the water boils.
- Then reduce the heat, add 1 bay leaf and leave to boil for 5 minutes.
- After 5 minutes, add noodles and 1 tsp to the soup. salt, and leave to boil for another 5 minutes.
- When 5 minutes have passed, turn off the heat and leave the soup to infuse for 10 minutes.
- After 10 minutes, pour the soup into the soup plate with a ladle and serve.
