Step cooking

  1. To begin with, we thoroughly wash the meat, get rid of all the excess films and cut it into portions. Next, put the prepared meat in a pan with a lid, in which we will cook the broth. Put chicken into the pan
  2. Peel 1 medium onion and 1 carrot. We put the whole vegetables in a pot with meat. Add onions and carrots.
  3. If necessary, remove the skin from 2 stalks of petiole celery, cut them in half and send to the pan. If celery is young, rinse it thoroughly. Add celery stalks.
  4. After that, fill the vegetables and meat with 2.5 liters of water and put on the stove. Cook until almost boiling, periodically removing white foam. Pour an ode into the pan and cook the broth.
  5. After boiling and removing the foam, add a little salt and cook the broth for at least 1.5 hours on low heat. Cook the broth under the lid.

  10. Round the finished dough, wrap it in cling film and leave at room temperature for 30 minutes. We place the dough in cling film and leave it to rest.
  11. We cut the rest of the dough into two parts and roll each part into a very thin layer. Divide the dough in half and roll it thinly.
  12. Dust the rolled layer with flour and turn into a roll, and then cut into thin strips. Cut the dough into noodles.
  13. Spread the sliced ​​noodles evenly on the board so that it does not stick together and leave for 25 minutes. distribute the noodles on the work surface and let it dry a little.
  14. Peel another 1 onion and another carrot. Cut the onion into small cubes, and carrot into thin strips. Finely chop the carrots and onions.
  15. Next, remove the vegetables from the broth. We take out the meat in a separate container, let it cool slightly, and then separate the flesh from the bones. We take out vegetables and chicken from the broth.
  16. Meanwhile, pour the chopped onions and carrots into the broth. Mix and cook under a closed lid for 5 minutes. We spread onion with carrots in the broth.
