Step cooking
- We start cooking the soup with potatoes. According to the recipe, you will need 500 g of potatoes, which we peel, rinse and cut into small cubes. Put the potato cubes in the pan. So that the potatoes boil faster and the soup boils more quickly, pour about 2.5-3 liters of boiling water into the pan and put on fire. We cover the pan with a lid and wait until the water boils. After boiling, reduce the heat and cook the potatoes for 10 minutes.
- While preparing potatoes, we are preparing vegetables. All of them must first be cleaned and washed. Chop onions into small cubes, and rub the carrots on a coarse grater.
- We put the pan on the stove and pour 2 tbsp. l vegetable oil. While the pan is heating, cut into slices of 80-100 g of smoked sausage. Do not grind it much. Put the sausage in a preheated pan and lightly fry over medium heat.
- After a few minutes, add the chopped onion to the sausage and fry a little more.
- When the onion gets a slightly golden hue, add the grated carrots to the pan. Also rub on a fine grater rub 10-20 g of parsnip root. If the tip is thin, then it can be chopped finely with a knife. Shredded parsnips are sent to be fried in a pan along with other ingredients.
- Sprinkle the grill to taste with a mixture of ground peppers and mix everything with a spatula. Fry until cooked and turn off the heat.
- Crush a clove of garlic with a knife and finely chop. We wash 3-4 branches of fresh parsley and also finely cut with a knife. If there is no parsley, then it can be replaced with dill or other herbs to your taste.
- Wash 250 g of red or orange lentils under running water. It is most convenient to do this in a sieve. Wash lentils in advance, because then it will stick together. Add the washed lentils to the potato pan.
- Together with lentils, you can add immediately cooked frying. All mix a little spatula.
- To make the soup more fragrant, put 2-3 peas of allspice and 1-2 bay leaves in a pan. Be sure not to forget to salt the soup. It will be enough 1 tsp. table salt. Cook for 10 minutes.
- After 10 minutes, put chopped parsley and garlic in the soup. Cook the soup under a covered lid for another 5-10 minutes.
- After 10 minutes, turn off the soup, it is completely ready. Pour the soup into plates and serve with fresh bread. The soup turns out to be quite thick and rich, and at the same time it has a special taste and aroma.
