Step cooking
- Finely chop one onion.
- Pour a little olive oil into the pan, dip the chopped onion into it.
- Shred 2 stalks of celery and send them to the onion.
- We cut one carrot into small cubes and pour into a pan, mix everything.
- We pass 2-3 cloves of garlic through the garlic and send to the other vegetables to fry.
- Pour into the pan 0.5 tsp. chili pepper flakes, mix thoroughly.
- When the vegetables are slightly gilded, we spread one and a half cans of canned white beans with liquid.
- Pour all this 1-1.5 liters of chicken broth. We throw 1 bay leaf into the broth. Salt to taste. Close the pan with a lid and cook for 15 minutes.
- The remaining half a can of beans is chopped with a blender until a pasty state.
- In a boiling soup, pour 1 tsp. oregano.
- We also spread the bean mass.
- We cut a bunch of spinach in large pieces, place in a pan, mix, cook for another 5 minutes under the lid.
- Cut the baguette into slices and dry them in the toaster. Sprinkle the dried slices with olive oil.
- Rub 100 g of Parmesan on a fine grater, sprinkle each slice of baguette.
- We put the toasts on a baking sheet covered with parchment, and send them to the preheated oven for 10 seconds to melt the cheese. Serve to the soup.
Useful Tips
- With the same success, you can use not canned beans, but ordinary, after boiling it first. To do this, soak the beans for several hours, and then boil for 30 minutes-hours. Cooking time for beans depends on its type and size.
- If desired, you can add potatoes to the soup.
- By the way, turmeric, thyme, rosemary, greens will be in such a dish.
- You can also add a tomato.
- Let the soup brew for half an hour - it will become even tastier.
