Step cooking
- We put a pan on the stove, pour about 3 liters of water into it and wait until it boils.
- We cut into large cubes 300 grams of zucchini and grind 300 grams of cauliflower in the same way (it can simply be divided into small inflorescences). When the water in the pan begins to boil, add a little salt to it. And pour out chopped zucchini and cabbage. Vegetables should be cooked over medium heat for about 20 minutes.
- We take the second saucepan and pour 100 ml of broth there (it can be any meat or vegetable broth). And pour 100 ml of milk there. Add to the liquids 30 grams of butter (can be in solid form, it does not have to be softened).
- Separate one yolk from the egg and add to the pan to the broth, milk and butter.
- At moderate heat, heat everything, stirring with a whisk or a wooden spatula. We need the butter to completely dissolve in the liquid.
- When the broth with milk begins to boil, pour the cooked vegetables there and simmer over low heat for about 2 minutes.
- Remove the saucepan from the stove. Let the soup cool slightly. Then, using a submersible blender, whip the soup until a creamy creamy smoothie is obtained.
- Pour mashed soup into prepared plates and decorate with fresh parsley leaves.
By consistency, such a soup of cauliflower and zucchini turns out to be very tender, creamy.
