Step cooking
- First you need to prepare the vegetables. Peel 1/2 medium-sized onions from the husk and cut into quarter rings. Peel 1/2 small carrots and cut into cubes. But since we will grind all the ingredients using a blender, the method of cutting is not fundamental. Optionally, carrots can even be grated.
- Next, add 40 g of butter to the pan with a thick bottom and melt it. After the butter has melted, add chopped onion to it. When the onion becomes transparent, add chopped carrots and 1.5 tbsp. l wheat flour. Mix thoroughly and fry for 1-2 minutes. Please note that flour can burn very quickly, and with it vegetables, so you need to prepare chicken or vegetable broth in advance.
- After that, pour 500 ml of clear chicken or vegetable broth into the pan. If the chicken stock is too rich, it can be diluted with plain water.
- Next, we parse 3-4 broccoli inflorescences into separate pieces and put in a saucepan to the rest of the ingredients. If it’s difficult to get fresh broccoli, you can use frozen broccoli, also putting it in a pan without first defrosting it. Salt and leave to cook for about 15 minutes until tender. If you use fresh broccoli, it may take less time.
- Then we drain part of the liquid into a separate container. We may still need it if the soup is too thick.
- Using a submersible blender, grind all the ingredients to a puree state.
- Then pour 100-150 ml of cream or milk and bring to the desired consistency. If the soup is too thick, add some of the previously drained liquid. At this stage, the soup must be tried and, if necessary, added. Pour the finished soup into portioned plates. In the center we lay out a hill of small croutons and sprinkle around the circumference with a small amount of paprika. Garnish with a leaf of greenery and serve. Enjoy your meal.
