- Peel 1 medium onion from the husk and cut into small cubes. Pour chopped onion into melted butter. Fry the onion until transparent. Pepper to taste. You can use black ground pepper or a mixture of peppers.
- We spread 500 g of frozen broccoli into a pan and fry for 1-2 minutes. It is best to use a frozen vegetable, because in the process of freezing in broccoli, the internal fibers are destroyed, and it becomes more loose and soft. But at the same time, it retains a bright enough color to make the soup a beautiful saturated shade.
- We peel 1 clove of garlic from the husk, also add to the pan to the rest of the ingredients and mix. If desired, it can be finely chopped or chopped with the help of the garlic. Next, pour the cream into the pan so that they almost cover the broccoli, and the tops are a little visible from above. In restaurants, 33% cream is most often used, but in combination with butter, such a dish may turn out to be too fat, so it is better to use 22% cream.
- Top up with chicken or vegetable stock. If there is neither one nor the other, add boiled water. Then add 1 tbsp. l soy sauce.
- We try on salt, and if necessary, salt and pepper to taste. We continue to cook over medium heat almost until it boils. Before the broccoli begins to boil, send 70 g of spinach to the pan. You can not remove the stems, but simply coarsely chop the greens from the bunch directly into the pan with the help of kitchen scissors. Mix.
- Until the spinach has darkened and the broccoli remains green, and begins to boil only around the edges, remove the soup from the heat. Next, you need to pour the soup as soon as possible into the blender bowl and beat at minimum speed. Please note that the longer the broccoli stays on the stove, the less vivid the color of the soup will turn out. It is also worth considering that when whipping a hot mixture in a blender, it is necessary to hold the lid of the bowl on top, otherwise it can easily slip out.
