How to cook duck meat broth
- In a pan with 2 liters of drinking water, dip 400 grams of washed duck meat (case, thighs, other parts of the carcass). Remove fat from meat before cooking.
- On high heat, bring the broth to a boil, reduce the heat to medium. In the process of cooking, collect foam from the surface with a slotted spoon. This will ensure the purity and transparency of the broth. After the foam ceases to appear, reduce the heat to small. Wash and peel 1 medium carrot. Cut the vegetable into 2 parts along the root crop. Put the carrots in the pan. Peel 2 medium onions. Cut one onion crosswise, put in a meat broth. Set the second aside. Cover the pan, cook until the meat is ready, about 25-35 minutes. If the meat is easily pierced with a fork, then it is ready.
How to make homemade noodles
- While cooking the broth, cook the noodles. Sieve 230 ml of premium wheat flour into a deep bowl. Beat in a bowl 1 large chicken egg (1st category). Add 2-3 tablespoons of broth from the pan. Knead the cool dough.
- When the dough is in a lump, put it from a bowl onto a work surface, a kitchen mat and knead it by hand. The noodle dough should be very firm, resilient. Form the kneaded dough into a ball. Put on a kitchen surface, cover with an inverted bowl, or place a lump in a plastic bag. Let the dough stand for 15-20 minutes.
- Sprinkle the table and dough with 50 ml of flour. Roll out a thin, transparent layer (approximately 2 mm thick), leave it for 10 minutes on the table. The surface of the rolled dough should dry out a little.
- Cut the formation into strips 4-5 cm wide. Fold the strips of dough on top of each other. Use a sharp knife to cut strips into noodles about 3 mm wide. The width and length of homemade noodles can be changed to your liking. After cutting, flip the noodles with your hands so that the noodles do not stick together.
Soup Assembly
- Take the cooked meat and boiled carrots from the pan to a wide plate, strain the broth through a sieve into another saucepan. Wash and peel 2 medium potatoes. Cut into small cubes. Put the pot of broth on medium heat, bring to a boil. Dip chopped potatoes into the broth. Salt and pepper to taste. Cook for 10 minutes until sliced potatoes. Thin the sliced onion in half rings. The thickness of the strips is approximately 2 mm.
- Cut into thin strips half boiled carrots from the broth.
- Separate the duck meat from the bones, divide it into small fibers or pieces. Put chopped onions, pieces of meat and carrots in a pan. Put 1-2 washed bay leaves and finely chopped parsley (3-4 sprigs) in the soup. Wash greens in advance.
- Pour the chopped homemade noodles into the soup, mix the contents of the pan.After the soup boils and the noodles float to the surface, reduce the heat and cook for 2-3 minutes. Turn off the heat, cover the pan with a lid. Let the soup brew for 5-10 minutes.
