Kitchen appliances and utensils:

Fennel or Leek | 100 g |

Cod fillet | 400 g |
Peeled shrimps for serving (optional) | 50 - 100 g |

Ground black pepper | taste |
Oregano | 0.5 tsp |
Thyme | 0.25 tsp |
Saffron (or 1 - 2 tbsp. L. Tomato puree) | 0.5 g |
Vegetable oil | 2 tbsp. l |
Butter | 30 g |
Extra virgin olive oil (optional) | taste |
Fresh dill for serving (optional) | taste |
Step cooking
- 100 g of fennel (or leek) are cut into half rings. We clean a couple of medium-sized carrots, wash them and cut them into thin circles.
- Fry vegetables in a cast iron for 2 tbsp. l vegetable oil for 2 to 3 minutes.
- After 2 to 3 minutes, add 1 to 2 tomatoes, 2 minced cloves of garlic and 30 g butter to the cast iron, sliced into medium sized slices. Mix everything thoroughly, reduce the heat a little and leave for literally 1 minute.
- Dissolve 1 cube of fish broth in 100 ml of water and add half of the resulting liquid to the cast iron.
- Following the broth add 75 ml (also half) of white wine.
- Mix all the contents of the iron and simmer for 10 minutes. After 10 minutes, add to the cast iron diced cod fillet (400 g) and the remainder of the fish broth.
- Next, pour 500 ml of water and 300 ml of heavy cream. Stir, bring the soup to a boil and reduce the heat a little more.
- Add a little black pepper, salt, and cook another 10 - 15 minutes.
- A small amount of saffron (literally 0.5 g) is thoroughly dissolved in several tablespoons of hot water.
- At the very end, add to the soup the rest of the white wine, diluted saffron, 0.25 tsp. thyme and 0.5 tsp oregano.
- Mix and let boil for another 1 - 2 minutes, and then turn off the heat.
Decoration methods and serving options
You can serve the dish by adding a few drops of olive oil to the plate (directly on top of the soup) and decorating it with a small amount of peeled shrimp (shrimp can also be replaced with crab sticks) and a sprig of fresh dill.
When serving, it should be noted that the soup will be in perfect harmony with croutons of white bread and with a glass of white wine.
