Step cooking
Cooking soup
- First of all, prepare all the necessary products for the soup. Peel 200 g of white onion and cut it into a very small cube.
- Peel 300 g of potatoes, cut them into cubes about 5 mm in size.
- Rinse 7-8 celery stalks and cut them up to 1 cm thick.
- Wash 300 g of apples, cut them into 4 parts, remove the core and cut them into 1 cm slices. Leave a few apple cubes for serving soup.
- Once all the ingredients are prepared, start cooking. Take a pan with a thick bottom. If not, use a pan. Melt 40 g butter in a saucepan, put chopped potatoes and onions. On medium heat, with constant stirring, bring the onion to transparency. It will take 4-5 minutes.
- Next, add chopped apples and celery to the pan.
- For 4-5, keep all the vegetables on low heat, stirring every 30-40 seconds. Do not allow the formation of a golden crust and make sure that the vegetables do not burn.
- After 5 minutes, pour vegetables in 1 liter of broth, add 1.5 tsp. salt.
- Bring to a boil, reduce heat and simmer over low heat under a closed lid for another 10-15 minutes. The soup should boil slightly.
- Cut 40 g of pre-washed greens.
- Add greens to the soup, boil everything together for another 1 minute.
- Let the soup cool slightly and grind it with a blender until smooth. The consistency of the soup, choose at your discretion. The longer you beat, the more silky the soup will turn out.
- Bring the whipped soup to a boil again, and then add 15 ml of lemon juice and, if necessary, salt.
Caramelization of nuts
- To prepare caramelized nuts in a pan, melt 25 g of butter and fry 80 g of walnuts on it.
- To nuts add 20 g of sugar, 0.5 tsp. salt and 0.5 tsp ground chili or paprika.
- Wait until the sugar begins to melt, and add 15 ml of brandy or brandy.
- Evaporate the alcohol and lay the nuts on a surface covered with baking paper.
Serving of soup
- Pour the soup into plates.
- In each plate add 1 tbsp. l sour cream or yogurt.
- Put a few slices of fresh apple and caramelized nuts on top.
- Garnish the dish with fresh green leaves and sprinkle with black pepper.

- For this soup, potatoes are more suitable which quickly cooks and crumbles during cooking.
- Take hard, sweet and sour apples.
- You can cook such a soup on chicken or vegetable broth.
- For the lean version of the dish, take the vegetable broth, and replace the butter with vegetable.
