Step cooking
For the preparation of fish soup, we will use 300 g of salmon pulp. If you want a richer broth, you can boil salmon ridges for about half an hour with onions, bay leaves and peppercorns. After this, strain the broth, remove the ridge and follow the instructions from this recipe. Or you can boil a carcass of salmon, sliced in portions. When the broth is completely cooked, get the carcass, separate the pulp, cut it into cubes and send it to the soup at the end of cooking.
- Broth or water, about 2-3 liters, send to the fire and let it boil. And at this time, we will prepare all the ingredients. Cut the salmon fillet into small pieces. Then peel two potato tubers and cut into about the same cubes as the fillet, a little less. Then peel the carrots, rinse, cut into small cubes.
- Peel the onion, wash and cut into cubes too. We clean the parsley root, wash it and cut into cubes. It will turn out very beautifully when all the ingredients of the soup have the same shape. We send the fillet to boiling water. After the water boils, make the fire medium and let it boil for 10 minutes. Then add all the chopped vegetables: potatoes, onions, carrots, parsley root. After boiling, cook for 7-10 minutes.
- At this time, we wash two tablespoons of rice with water until it remains light. Then we send the rice to the pan, mix. We add rice at will, in general, even without it, the soup turns out to be very rich and tasty. Add a teaspoon of salt, a teaspoon of seasoning for fish. The composition of the seasoning includes turmeric, which will give the finished soup a beautiful golden color.
- Boil the soup a few minutes until rice is fully cooked, then remove from heat and serve. Pour into portioned plates, add chopped parsley and dill. We can also season with cheese sauce or sour cream.
When boiling in this soup, you can add 300 ml of cream, then the dish will turn out even more interesting to taste. You can also make mashed soup out of it. To do this, add cream and chopped herbs, and interrupt the soup with a blender.
Store salmon soup in a saucepan with the lid closed in the refrigerator for 5-7 days. Many people like it even when it's cold.
