Step cooking
- Cooking Finnish soup begins with the broth. It will require 1 kg of salmon soup set. A fish tail and a head are also suitable, from which gills must first be cut. If such products were not found, then the soup can simply be boiled in water. Put the soup set in a medium-sized pot, pour 2 liters of water and put on fire.
- Once the broth boils, remove the foam with a tablespoon.
- Season the broth with 2-3 peas of pepper, add 2 bay leaves. One onion is cut in half and thrown into the broth. Cook over low heat for 15-20 minutes under a closed lid.
- While the broth is preparing, they are preparing vegetables. 4-5 medium-sized potatoes are cut into large cubes. One onion is cut into small cubes.
- Remove the pan from the fire using a slotted spoon, and remove some fish from the broth. You can use the meat that is in the head and tail of salmon.
- Filter the finished broth through a sieve.
- Shredded potatoes and onions are added to the soup. Salted to taste and set on fire. Boil for 15-20 minutes until the potatoes are soft.
- Cut 500 grams of salmon fillet into slices of 2-3 cm. If you are using pulp from a soup set, then the amount of salmon fillet can be reduced to 300 grams.
- A special sauce is prepared for the Finnish soup, thanks to which the dish becomes thicker. This will require 1-2 tbsp. l flour that is poured into a small deep bowl.
- Flour pour 300 ml of cream. It is recommended to use a product with a fat content of 33% or more. Thoroughly mix the cream with flour, so that the latter is completely dispersed and does not form lumps in the sauce.
- When the potatoes are cooked, add the salmon fillet and cook another 7-10 minutes. Then add the pulp from the soup set.
- Gradually pour the cream with flour, continuously stirring the soup with a tablespoon. It is possible to cook Finnish soup without adding flour, and using only cream. But thanks to the flour, the dish turns out thicker and with a pleasant velvety structure.
- Bring the soup to a boil and add 1 tbsp. l butter. If necessary, the soup is salted and seasoned with a pinch of ground black pepper.
- In advance, chop 1 bunch of dill and add to the finished soup. Leave to boil for 2-3 minutes and remove from heat, covering with a lid. Let the soup stand for a couple of minutes.
- Red fish soup is poured on plates, decorating with several sprigs of dill.
