Ingredients
- Potato (large) - 1 pc.
- Zucchini young, small - 1 pc.
- Medium-sized carrots - 1 pc.
- Bell pepper, small - 1 pc.
- Onions, medium - 1 pc.
- Medium-sized tomato - 1 pc.
- Green parsley - 4-5 branches
- Ground black pepper - 1 pinch
- Vegetable oil - 30-40 ml
- Table salt - to taste
- Drinking water - 2 l
Step cooking
- Wash and peel 1 large potato tuber. Cut the vegetable into small cubes (with a side of about 1.5 cm). Put chopped potatoes in a deep bowl, fill with water so that the slices of the vegetable do not darken.
- Peeled onions (1 medium-sized head), cut in half and cut into strips along half.
- Cut 1 large carrot into small strips. Wash and clean the root crop in advance.
- Pour 2 liters of drinking water into the pan, add salt to taste. Set cook on medium heat. Pour the potato slices into the pan (after decanting the water with which they were poured), cook for about 15 minutes.
- Pour 30-40 ml of vegetable oil of your choice into the pan. Heat the oil well, put chopped onions and chopped carrots in a pan. Cook over medium heat, stirring occasionally.
- From 1 medium tomato, remove the peel, cut the place for fastening the stem, chop into a small cube, transfer to a pan to other vegetables. Wash 1 small bell pepper, remove the stalk, middle with seeds and septum. Divide the pepper into 4 or more parts, cut into thin strips. For the preparation of soup, it is better to take red bell pepper - so the dish will look much more appetizing. Put a bell pepper straw in a pan, mix, continue to fry the vegetables.
- Peel one small young zucchini, cut the vegetable into small cubes.
- Pour the slices into the soup pot.
- Add vegetable frying to the soup, mix, add salt and black pepper to taste. Let the soup boil for 5-7 minutes over low heat.
- Wash and finely chop green parsley (4-5 branches). Sprinkle greens in a saucepan with soup. Turn off the fire, you can put a bay leaf. Cover the first with a lid, let the dish stand on the stove for another 10 minutes so that all tastes and aromas are combined in it.
When serving soup, you can add sour cream or cream to it - this will make the soup even more delicate in taste. To prepare a more satisfying version of this vegetable soup, meat or mushroom broth is used instead of drinking water.
