Product Preparation
- Peel potatoes and carrots. In porcini mushrooms, we separate the hat from the legs, clean the top layer of the mycelium from the legs, and thoroughly wash the hats under running water.
- We clean the onion and finely chop it with a sharp knife.
- Cut potatoes into cubes of 6-7 mm.
- Carrots are either finely chopped or rubbed on a coarse grater.
- Cut the peeled mushroom legs into cubes 1 cm wide.
- We divide hats into strips 3-4 mm thick.
Cook soup
- First of all, put the chopped mushrooms in a pan and pour cold water. On the burner, turn on a strong fire to bring the water to a boil, after which the fire is slightly reduced. If you think that there are too many mushrooms, and they can fall out of the pan when boiling, do not worry - the mushrooms will boil and decrease in size by at least half.
- As soon as the water boils, it will be necessary to observe the broth and remove the foam several times in a timely manner. This must be done so that the soup is transparent and beautiful, the broth will not suffer from this.
- Mushrooms will cook for about 20 minutes, after which we add potatoes and cook for 10-15 minutes (depending on the variety).
- We do the roasting: turn on the burner at maximum power, pour 2 tbsp into the pan. l vegetable and 20 g butter. As soon as bubbles appear on the oil, put the chopped onion and fry it until it is translucent golden color, stirring occasionally.
- After that, add the carrots. Fry it for 4-5 minutes until soft. The lighter is ready.
- As soon as the water boils after adding the potatoes, salt the soup and throw the peppers of black pepper. If desired, you can add powdered dry garlic, coriander, rosemary and hot red pepper, bay leaf.
- We check the potatoes for readiness: it should be easily pierced with a knife, then reduce the fire to a minimum state.
- Add the frying to the soup and simmer it for another 5 minutes. If desired, it can be covered with a lid.
Innings
So, the soup is ready. Now we pour it into plates, add sour cream, parsley and dill, ground black pepper to taste. Enjoy a fragrant homemade mushroom soup.
