Step cooking
- In order to prepare a delicious and rich soup with beans, you will need meat broth, about 3 liters. Perhaps you have cooked it in advance for such an occasion, or you can make it while cooking the soup. Chicken, turkey, veal on bones are well suited for broth. Cook the broth for at least 1.5-2 hours. Soak 250 g of beans in advance in the water overnight to make it swell and cook faster. In a saucepan of a suitable size, strain through a sieve 3 liters of broth and put on a small fire.
- Rinse soaked beans well under running water several times. Then pour it into the pan and salt the broth to taste, mix well with a spoon. Cook the beans over medium heat for about 40-60 minutes, if you haven’t soaked them in advance, just increase the cooking time to 1.5 hours.
- In the meantime, prepare the vegetables. Peel one large onion, rinse and cut into cubes. Depending on the size, use 1-2 carrots, peel them, rinse and cut into small cubes.
- You can use tomatoes either frozen or fresh. 2-3 pcs. pour tomatoes with boiling water to easily remove the skin; hot running water is suitable for frozen tomatoes. Remove the stem in the tomatoes and cut them into cubes. Also peel, rinse and cut into cubes of medium size 1-2 potatoes.
- Pour about 2-3 tbsp into the pan. l vegetable oil and heat a little over low heat. Place the chopped onion in a pan and lightly fry it until golden brown, stirring with a spatula.
- Then add the chopped carrots to the onion, mix well and fry for several minutes, stirring.
- Add tomatoes to all vegetables, mix and simmer the vegetables for about 5 minutes over low heat under a lid. If there is not enough tomato liquid in the pan with vegetables, then add some broth from the pan.
- About 20 minutes before the beans are ready, add chopped potatoes to the pan and mix with a spoon.
- Then pour 100-150 g of frozen green beans into the pan.
- After 10-15 minutes, add prepared vegetables to the broth, mix and put 1-2 bay leaves. If desired, add black ground pepper to taste and bring the soup to a boil.
- You can use your favorite spices and dried herbs for soup. Rinse and chop the parsley or dill. When ready, add greens to the soup, turn off the stove and cover the pan so that the dish is infused.
