Step cooking
Traditionally, kharcho is cooked with beef meat. However, the mistresses of all countries neighboring Georgia have long remade the recipe to their tastes and possibilities. So our kharcho soup will not be with beef, but with pork meat.
- Wash a piece of pork pulp (500 g), cut into cubes 3 cm by 3 cm (approximately).
- Heat the pan well. Put the meat in a very hot pan, fry the slices without adding oil for about 4-6 minutes. Stir the meat all the time.
- When the meat turns gray on all sides and ceases to secrete meat juice, add vegetable oil (40 ml) to it. Drain the meat over low heat for another 4-5 minutes. While the meat is languishing, take care of the vegetables.
- Wash and peel the carrots well (1 pc.), Cut it into small cubes (6-8 mm). Peel onions (2 pcs.), Chop into small pieces (4-6 mm). Add chopped carrots and half onion to the meat. Let it simmer for 7-10 minutes, stirring occasionally.
- Transfer the meat to the pan.
- Pour the meat with water (3 L). Add salt to taste.
- After the water boils, add the washed rice (200 g). Shuffle. Cook on low heat until meat is fully cooked (approximately 40-45 minutes)
- Wash the tomatoes (5-6 pcs.), Pour boiling water over one piece and peel, cut into small cubes. Cut the remaining tomatoes in half and grate on a coarse grater (without skin). A slice of hot pepper (2-3 cm) cut into small cubes. Garlic (3-4 cloves) finely chop.
Cooking dressing
- Pour 40-50 ml of vegetable oil into a preheated pan. Put the other half of the onion and finely chopped garlic in the preheated oil. Stir fry until the onions are transparent.
- Add grated tomatoes to the pan, mix, let the mixture boil for 5 minutes.
- Add the diced tomato to the pan, simmer another 5-6 minutes.
- Pour seasoning “hops-suneli” (2 tsp), finely chopped hot pepper into the dressing, add ground black pepper and paprika to taste. Mix well. Salt dressing to taste. Stew for 3-4 minutes.
Harcho picking
- Pour dressing into a pot of meat and rice. Dip on low heat for 3-4 minutes.
- Turn off the hotplate, leave the grub to brew for another 10-15 minutes.
- When serving, add finely chopped parsley and dill to the plates.
