Step cooking
Fish preparation
- We take 1 kg of fresh pike perch, clean it from scales and viscera, cut off the fins. Rinse well.
- We cut it into steaks, approximately 2 - 3 cm. In order for the fried fish to turn out with a tender and crispy crust, we must remove excess moisture from the pieces with a paper towel and dry well.
- We shift the steaks into a glass bowl, sprinkle 1 tsp. salt. Mix the pieces with your hands so that the salt is evenly distributed.
- Let stand for 15-30 minutes, during this time the fish is saturated with salt.
Breading
- Rub the zest with one lemon on a fine grater.
- To it we add 4 tbsp. l flour.
- Add 1 tsp. salt.
- There, we roll in ½ tsp. ground black pepper.
- All mix well.
Cooking fish
- We put the pan on the fire, heat it. Pour 40 ml of vegetable oil for frying.
- Roll all the pieces on both sides in flour. If there is a place without breading, sprinkle it.
- We put pieces of fish on a frying pan in hot oil. Fry over high heat until golden brown. There is no need to close the lid.
- Turn all the pieces over to the other side. Fry in the same way for 5 - 7 minutes. If the pieces are large and you want the fish to be softer, cover with a lid for a short while so that the meat of the fish is cooked from the inside.
- We spread the fish on a plate with a paper towel so that excess oil remains on the towel.
