- Rinse thoroughly 400 g of green beans in advance and let it dry a little. To make it dry faster, you can use paper towels. We prepare each pod, cutting off the ends with kitchen knives on both sides. Then cut the pods into pieces 5-6 cm long. Put the chopped beans in a deep bowl. If you use frozen beans, then in no case do you need to completely defrost them at room temperature. To make it as tasty as fresh, you need to boil water in a saucepan and put frozen asparagus in it. Boil for exactly 1 minute and then cook in a pan according to the usual recipe. To taste, frozen asparagus will not differ from fresh.
- Pour about 1.5-2 liters of water into the pan and wait until it boils. Salt the liquid by adding 1 tsp. salt. In boiling water, spread the prepared green beans. On high heat, bring the beans to a boil. To make it boil faster, cover the pan with a lid.
- After boiling, reduce the heat a little and boil the beans for 1 minute. Cooking it for a long time is not required, because then it will lose its rich green color and become tasteless.
- While the beans are being cooked in a pan, put the pan on a neighboring burner over medium heat and put about 30-50 g of butter on it. It must melt. Do not use too much oil, but do not spare the product so that the beans soak up the creamy taste.
- Using a slotted spoon, we catch the green beans from the pan and spread it on a well-heated pan. Fry beans in a pan over high heat, periodically stirring with a spatula so that it does not burn.
- During frying, if necessary, add string beans to about 1 tsp. salt and season to taste with black pepper. Mix everything thoroughly with a spatula.
- On average, beans need to be fried for 1.5-2 minutes. The younger it is, the less time it takes to cook. At this point, she will already have a gentle creamy aftertaste and become slightly crispy. The pan-fried asparagus beans are ready and can be served as a side dish. You can also sprinkle the dish with grated cheese and a little garlic. Preheat the oven at 200-220 degrees and bake the beans for about 5 minutes to form a delicious cheese crust.
