Ingredients
- Beef Steak - 350-400 g
- Asparagus - 200 g
- Champignons - 200-250 g

- Coriander - 1, 5 tbsp. l
- Ground black pepper 1-2 tsp.
Step cooking
- To prepare the New York steak we take the goat meat cut from a thin part of the lumbar. We will need 350-400 grams of such meat. It is very good if this meat has a 10-14 day exposure.
- Before you cook a steak, first prepare a side dish for it. It will be asparagus with mushrooms. We clear one onion from the husk, wash it under the tap, cut it into quarters on a cutting board.
- We put the pan on the stove, add 30-40 grams of butter to it. To prevent butter from burning, add 20 ml of vegetable oil to the pan. Heat the pan until the butter melts, then put the chopped onion, fry, stirring constantly, until transparent. Pre-washed mushrooms in the amount of 300-400 grams are cut into four parts on the working surface. When the onion is fried until transparent, add chopped champignons to the pan, cook them until the mushrooms turn golden, get their taste.
- At this time, when we are preparing a side dish, 15 minutes before starting to cook the steak itself, salt the meat with about 1 incomplete tablespoon of salt on both sides, sprinkle with black ground pepper in an amount of about 1 incomplete teaspoon, give the product a “rest”. Meanwhile, the mushrooms in the pan are ready, so we are in a hurry to add 200-250 grams of asparagus to the pan. Beans can not be thawed before use. In this case, there is no need to fry it, just warm the component so that it remains juicy.
- Add half a teaspoon of coriander to the pan, a teaspoon of salt, half a teaspoon of black pepper, mix, set aside the pan. We put a grill pan on the stove, wait until it is heated to the desired temperature, since the steak is cooked at maximum heat. While the pan is warming up, grease the steak with vegetable oil on both sides.
- We spread the meat on a grill pan, first fry on one side for 3-4 minutes, then turn on the other side and also fry 3-4
- We give the steak "rest" 3-4 minutes after frying, do not cover it to get an average degree of frying.
Useful Tips
- The ideal thickness of the New York steak is 2.5-3 cm. This allows the meat to cook on high heat without drying too much.
- For the preparation of such a steak, only meat of bull calves of fattening, in which there are fatty inclusions, is used.
- Before placing the steak on a grill pan, check the degree of heating. It should be maximum.Sprinkle some water on the pan: if the droplets dance, rather than evaporate immediately, then the heat is consistent.
