Ingredients
- Tomatoes - 2 kg
- Bell pepper - 500 g
- Onions - 2 pcs.
- Fresh parsley - 40 g
- Fresh cilantro - 40 g
- Sugar - 90 g
- Salt - 15 g
- Vinegar 9% - 60 g
- Garlic - 3-4 cloves
- Hot peppers to taste
- Bay leaf - 3 pcs.
- Nutmeg - 2 g
- Allspice peas - 6 pcs.
- Black peppercorns - 6 amount
- Suneli hops - 30 g
Step cooking
- Wash 2 kg of tomatoes, 500 grams of bell pepper, 2 onions, 1 hot pepper, 40 grams of parsley and 40 grams of cilantro under running water. Cut the tomatoes into pieces and put them in a separate bowl.
- From the peppers remove the core and seeds. Seeds can not be removed from the sharp so that the sauce turns out with a speck.
- Onions are also cut into arbitrary pieces, so that it is convenient to grind.
- Cilantro and parsley are also cut arbitrarily.
- Using a blender, grind all the tomatoes to a homogeneous mass.
- Separately, grind sweet pepper, hot pepper, herbs and onions in a blender.
- Pour the tomatoes into a large pan and put on the stove. Cook for 10 minutes. Add the remaining ground ingredients to the pan and cook for another 10 minutes. Add bay leaf to the sauce and cook for another 7-10 minutes.
- Peel 3-4 cloves of garlic and pass them through a press.
- 5 minutes before the sauce is ready, add garlic, 6 peas of black pepper, 6 peas of allspice, 2 grams of nutmeg, 30 grams of suneli hop, 90 grams of granulated sugar and 15 grams of salt. Mix well and cook for another 5 minutes.
- We sterilize jars and lids.
- At the end of cooking, pour 60 grams of 9% vinegar into the sauce, boil for another 2 minutes and turn off the heat. We pour hot sauce into cans, close the lids, turn upside down, wrap it with a blanket and leave to cool at room temperature.
Decoration methods and serving options
- This sauce can be stored both in the refrigerator and in the cellar or basement.
- The shelf life of the sauce is one year in closed form, and no more than two weeks in open. If the can is open, then you can only store the product in the refrigerator.
- If you want the sauce to be thicker, then choose dense, small tomatoes.
- In the case when you decide to cook a hot sauce, add more garlic and hot pepper to it, but do not overdo it.
- You can also put yellow and black tomatoes in the workpiece.
