Step cooking
- We start by making homemade mayonnaise. We break the eggs and separate the yolks in a special bowl for the blender. We don’t need squirrels.
- Gently pour the vegetable oil over the yolks. You can use olive, sunflower or any other vegetable oil as desired. It must be refined. The main thing is to pour it carefully so that the yolks remain at the bottom of the bowl, and the oil is on top.
- Add mustard and lemon juice. Salt and pepper to taste.
- Gently lower the hand blender into the bowl to the bottom to the yolks and beat at a minimum speed of 30 seconds.
- Then turn the blender leg a little so that the mass of yolks grabs a little vegetable oil.
- After that, you need to slightly tilt the blender leg and raise it gradually to capture more oil.
- The result is a very thick mayonnaise, which will be the basis for our shawarma sauce.
- Add garlic, crushed with a press, or finely chopped with a knife into the bowl.
- Add kefir. If you like thick sauce, then add 1 cup. If you want to get a thinner sauce in the end, you should add one and a half glasses.
- We immerse the blender in the bowl and beat everything until smooth for about a minute.
- The result is a good shawarma sauce. This sauce is best for chicken.
Cooking options
People who prefer to cook shawarma at home usually cook the sauce themselves. There are various options for its preparation:
- You can prepare shawarma sauce based on sour cream, fermented baked milk or yogurt.
- Instead of homemade mayonnaise, you can take the ready-made one from the store as the basis of the sauce.
- Sometimes boiled potatoes, fresh or pickled cucumbers, olives are added.
- You can experiment with the addition of various spices. All kinds of hot peppers, curry, parsley, paprika, oregano, hops-suneli, ground nuts can be added to the shawarma sauce.
- Sometimes add dill, onion, cilantro or parsley.
- There are recipes for shawarma sauces with tomato paste or fresh tomatoes.
