How to make Japanese mayonnaise at home
From its usual traditional mayonnaise, its Asian counterpart is distinguished by its lighter texture, delicate taste and lower calorie content. It contains rice vinegar, soybean oil, egg yolks, yuzu peel, miso paste, as well as pepper and salt. This sauce can only be purchased in specialized stores of Japanese products.
However, if you do not have such an opportunity, this dressing is easy to prepare at home, replacing the exotic ingredients with the more familiar and common in ordinary supermarkets. So, soybean oil can be replaced with olive, rice vinegar - apple, and peel yuzu - this is the same zest of lime. The only thing you can’t find an analog to is miso paste, so it can only be purchased at the store. Further, the process of making Japanese mayonnaise looks like this:
- Take 3 yolks and rub them with 20 ml of apple cider vinegar.
- Constantly whipping the finished mass with a blender, we introduce 230 g of olive oil into it.
- Grate 1 lime peel (you can also use lemon) and add it to the resulting mixture.
- We send 50 g of miso paste there.
- Salt and pepper mayonnaise to taste and beat the ingredients thoroughly again.
