Ingredients
- White cabbage - 4 kg
- Carrots - 2 kg
- Onions - 1 kg
- Any mushrooms (preferably forest) - to taste
- Sunflower oil - 600 ml
- Tomato paste - 300 g
- Table vinegar 9% - 200 ml
- Water - 400 ml
- Salt - 12 tsp.
- Sugar - 10 tbsp. l
- Bay leaf - 7-8 pcs.
- Black peppercorns - to taste
Step cooking
- Chop white cabbage (4 kg).
- Peel the carrots (2 kg), wash and grate on a coarse grater.
- Peel and onion (1 kg) and cut into small cubes.
- Sort any forest mushrooms (arbitrary amount), rinse in several waters and boil until cooked for 25-30 minutes. Finely chop the boiled mushrooms.
- Put all prepared ingredients in a large pot: shredded cabbage, grated carrots. chopped onions and boiled mushrooms.
- Add to the pan: sugar (10 tablespoons), salt (12 teaspoons), tomato paste (300 grams), water (400 ml), table vinegar (200 ml) and vegetable oil (600 ml). Add bay leaf and black pepper to your taste. Mix all ingredients well by hand.
- Put the pot with the hodgepodge over medium heat and cook for 40 minutes, stirring occasionally with a wooden spatula or spoon.
- After 40 minutes, put the hot cabbage salad with mushrooms in pre-sterilized jars and roll up with sterilized lids.
- Wrap all the cans rolled up with lids in a warm blanket and wait for them to cool completely. Store cooled jars in a cool place.
Feed options
Cabbage solyanka with mushrooms for the winter is the most versatile harvesting. It can be used for cooking stews and soups, as a filling for pies and pies. Salad can be used as a cold snack, and if it is heated, then as a side dish for meat or poultry.
