Step cooking
- In a deep bowl, mix two types of flour: premium flour (1 cup) and whole grain wheat flour (1.5 cups).
- Add salt (an incomplete tablespoon), soda (a slightly incomplete teaspoon), citric acid (1/3 of a teaspoon) to the flour and mix all the dry ingredients.
- In ice water, which is cooled in the refrigerator or put ice (200 ml), pour any vegetable oil (100 ml) and beat the mixture with a mixer until white foam.
- Pour the resulting emulsion into flour with dry ingredients and knead a soft, elastic dough. Cover the bowl with the dough with a plate or a lid, and let it rest for 10 minutes.
- Mix spices in a separate small bowl: sesame seeds (2 tablespoons), flaxseed (2 tablespoons), dried basil (tablespoon), coriander (1/2 part tablespoon), zira (1/2 tablespoon), paprika ( tablespoon) and mix well.
- Cover the table with baking paper, cutting off such a size so that then the sheet fits on a baking sheet. Put the resulting mixture of spices (a tablespoon) on baking paper and, tearing half of the dough and forming a ball out of it, roll it in spices from all sides so that the spices are pressed well into the dough. On the same paper with a rolling pin, roll out the dough in spices into a thin layer of round shape, in the process of rolling, pour another mixture of spices into empty places.
- Cut the dough into cookies of any shape with a knife or a special device. It can be triangles, squares or rhombuses.
- Transfer dough paper onto a baking sheet and bake in an oven preheated to 180 degrees for about 20 minutes.
Food Options
Serve the cracker with any sauce. Great pesto or Mexican guacamole sauce. You can make a sauce of fresh tomatoes with ginger. To prepare such a sauce, randomly cut ripe red tomatoes (2-3 pieces), bell pepper (1 piece) and ginger root (2-2.5 cm).
Put all the ingredients in a blender and add a little olive oil (a tablespoon) and dried basil (a pinch) to them, and chop well.
Pour the finished sauce into the saucepan, and put the cookies on a large dish, and serve.
