Step cooking
- To prepare the brine, cut one onion into 4 parts. It is not necessary to peel it off, just wash the vegetable thoroughly.
- Put the onion, cut into 2 or 4 parts, into a deep bowl and add half a teaspoon of coriander, 3-5 peas of allspice and 7-10 peas of black pepper. In a deep bowl also put 3-5 bay leaves, 3 tbsp. l salt and 1 tbsp. l Sahara.
- Pour all the ingredients with 1 liter of ordinary water and stir a little.
- We put the brine on the fire, wait until the water boils, and boil for 10 minutes. After cooking, let the brine cool slightly.
- At this time, we are preparing and cutting fish. First, we cut off the head of the mackerel and through the large incision on the belly we get all the insides. Be sure to carefully scrape off the black film with the knife, which remains on the belly, as it gives the fish a strong bitterness. We wash each cut mackerel under running water.
- Cut the cut fish into small pieces of 1.5-2 cm in size. We cut the ponytails, they do not need to be pickled.
- Stacked pieces of mackerel in a jar and pour the cooled brine. We close the jar with a lid and leave it to marinate for 1.5-2 hours at room temperature.
- At this time, we are engaged in products for the second stage of pickling mackerel. To do this, 3-4 heads of onions are peeled, cut in half and cut into half rings.
- Pour onion half rings into a deep bowl, slightly salting.
- Pour onion 100 ml of vegetable oil and 2 tbsp. l vinegar 9%. Add half a teaspoon of freshly ground black pepper and a similar amount of coriander. All ingredients are thoroughly mixed.
- Slices of mackerel spread in a deep bowl with onion marinade. We mix the products and put in the refrigerator for another 30 minutes to marinate. Mackerel can be consumed immediately, but then it does not have time to soak in onions, vinegar and vegetable oil.
- Put the prepared salted mackerel onto a dish and serve with mashed potatoes or any other side dish. On top of the fish, you can sprinkle with a small amount of chopped parsley or dill.
