Step cooking
- Weigh and prepare all necessary foods before starting cooking. Finished puff pastry must be removed from the freezer in advance, so that it melts a little and becomes suitable for work. If you wish, you can buy ready-made dough in the store or cook it yourself, but for this you need a little more time. Wash raisins under running water, pour cool boiling water and cover. Leave it to steam for 10 to 15 minutes. The amount of raisins can be varied to taste, replaced with other dried fruits or candied fruits, or not added at all.
- Pour the cottage cheese into a deep bowl, add regular and vanilla sugar, one whole egg, and mix well until smooth with a mixer, whisk or spoon.
- Then add 1 tbsp. l sour cream, mix and evaluate the resulting consistency. If the curd turned out to be liquid, then it is better not to add the remaining sour cream. The consistency of the filling directly depends on the fat content of the cottage cheese and the size of the chicken egg.
- Roll the dough into a thin rectangular layer with a width of about 20 - 25 cm.
- Drain the water from the raisins, if necessary, can be drained using a colander. Pour raisins to the curd mass, mix well.
- Spread the filling evenly over the dough, not reaching the edges of the formation 2 - 3 cm. Gently roll into a tight roll, pinching the edge well. Turn the resulting roll upside down and cut into small pieces 3-4 cm wide.
- Cover the baking tray with parchment or a special heat-resistant silicone mat. Break the remaining egg into a small bowl and shake it well with a fork, brush the rolls with this egg mass using a cooking brush.
- Preheat the oven to 200 ° C. Puffs can also be sprinkled with sesame seeds, flax grains, sunflower seeds, poppy seeds, sugar, cinnamon or other sprinkles.
- Put the baking tray with rolls in the oven and bake for 25-30 minutes to a beautiful golden color. After baking, remove the puffs from the oven, let cool and serve. If desired, ready-made puffs can be sprinkled with powdered sugar.
