Step cooking
- We put four chicken eggs in a small stewpan, fill it with cold water and set it on a fire to cook. Add salt, after boiling, cook for 10-12 minutes. After that, fill with cold water, let the eggs cool.
- We clean chicken liver in the amount of 270 grams of excess fat, films, rinse under running water. Put in a pot of boiling water, add half a teaspoon of salt, cook for 15 minutes. After cooking, we take it out of the water, allow the product to cool.
- We clear one onion weighing about 120 grams of husk, wash it under the tap, cut it into cubes on a cutting board, and remove it to the side for now. Washing under the tap 270 grams of champignons. We cut them arbitrarily into small pieces. We put a frying pan on the stove, pour 30 ml of vegetable oil there, heat it and add chopped onion.
- Following onions we send the crushed champignons, fry. You need to fry the vegetables until all the liquid has left the pan. After that, remove the pan from the heat, let the mushrooms and onions cool.
- Boiled chicken eggs are peeled, separate the proteins and yolks separately. Rub the yolks on a medium grater, put in a separate container. Rub the chicken proteins on a coarse grater, also put separately.
- Rub the cooled chicken liver into a separate bowl on a coarse grater, put it aside for now. Grated pickles in the amount of 270 grams on a coarse grater, placed in a separate plate. Excess brine from grated cucumbers should be removed.
- Now we proceed to the formation of puff salad. Lay out the components in a deep salad bowl. If necessary, salt and pepper each new layer of products to taste, and then spread with mayonnaise. The first layer consists of grated chicken proteins. Following the squirrels, spread the fried champignon mushrooms. Next in line will be Korean carrots. Next we put the chicken liver, not forgetting to add salt and pepper ingredients.
- Now put a layer of grated pickles on the liver.
- The last layer will consist of chicken yolks. Lubricate the last layer of yolks with mayonnaise. The Pechenkin salad is now ready.
Useful Tips
- If you do not have Korean carrots, you can replace it with ordinary carrots, after boiling it first.
- Before serving, send the salad in the refrigerator for about two hours, if desired, decorate it with finely chopped greens.
