Step cooking
- First, prepare the dough. To do this, you can use a dough mixer or mixer with nozzles for the dough. Sift 500 g of flour into the bowl, add one teaspoon of salt, one tablespoon of sugar, 7 g of dry yeast, mix well.
- Heat up to 40 degrees 300 g of milk, add to flour, mix well. Melt 20 g of butter and send to the mass. Quickly melt the oil in the microwave. Add one egg, 30 g of vegetable oil, knead the dough. Lubricate the bowl inside with vegetable oil, form a ball from the dough, send it to the bowl, cover with cling film and leave to rise for an hour.
- During this time we will make the filling. Put crushed brine cheese in a deep bowl. You can take 350 g of Adyghe and 150 g of feta cheese. You can replace cheese with cottage cheese of any fat content.
- Cut a bunch of greens. It can be allsorts or one kind: parsley, dill, cilantro. Add chopped greens to cheese, add salt, mix. Be sure to taste it, add salt if necessary.
- Melt 150 g butter to grease the dough. When the dough is suitable, lay it on a work surface greased with vegetable oil.
- We form from it small portioned balls the size of a tangerine, put them on a tray, cover and leave to fit for 10 minutes. From this amount of dough, 10 balls are obtained.
- As soon as the balls come up, we form cakes out of them with our hands. Then we roll out layers with a diameter of 30 cm. We will form blanks for future baking. Lubricate each layer inside with melted butter. In the center we spread the cheese filling, form a bag of dough. Then we turn the dough near the filling, straighten the edges and wrap the bag with them.

- We cover the baking sheet with parchment paper, lay out the buns, cover with cling film and leave for 30 minutes. 10 minutes before baking, turn on the oven 180 degrees to heat up. We send the pan to the preheated oven, bake for 20 minutes. After that we get it out, cover with a towel, let it cool. We spread it on a flat plate and serve it with your favorite drink.
