- Slivyanka is a very tasty and aromatic home-made wine. Such wine can be prepared from any berries: raspberries, currants, cherries. We take 10 kg of plum, but the main condition is that you don’t need to wash the plum, because the plaque that is on the plum is wild yeast, thanks to which the plum will ferment, and you get a natural wine without the addition of strong alcohol. The only thing: the plum must be freed from the stone so that the wine does not bitter. For the preparation of cream, it is best to use a large container: an aluminum bucket, a large pot, or, in this case, a plastic bucket. We shift the plum into a bucket.
- First add 2 kg of sugar to the plum. The amount of sugar depends on the acid of the berries. If the plum is sweet enough, then this amount of sugar will be enough; if the plum is acidic, then you may need more sugar than indicated in the recipe. In the process of making wine, you must constantly try the wort to taste.
- Then fill the plum with 8 liters of cold water, stir the sugar and squeeze the plum so that it starts the juice. It is more convenient to do this with your hands.
- We close the bucket with a lid and set it in a warm place for 5 days for fermentation.
- After this time, the plum wandered well, and a foamy cap formed on the top, which must be carefully removed with a fine sieve. And also it is necessary to strain the wort through a sieve.
- We wash the bucket and again pour the strained wort into it, tightly close the bucket with a lid and install a hydrozator, in which you need to pour a little water. In this form, leave the wine to ferment for 3 weeks. About once a week, you need to check the process of wine fermentation and taste it. At this stage, add another 2 kg of sugar. After a week, you need to taste the wine again - if it acidifies or the fermentation process becomes, you need to add a little more sugar.
- When 3 - 3.5 weeks have passed, the wine can be removed from the lees. To do this, we lower one end of the silicone hose into the wine, and without touching the precipitate, pour it into a clean jar. When all the wine is drained, close the banks with lids. We clean the banks in a cool place: basement, cellar. Since the fermentation process is still ongoing, after a week the wine needs to be removed from the sediment again. Then a week later, for the last time, remove the wine from the lees. Pour the finished and purified wine into a container that is convenient for you, in which it will be stored, and put in a cool place. For the wine to finally mature and reach the right condition, it needs 1 to 2 months, and then you can drink it. Slivyanka is semisweet with a bright plum aroma. Enjoy your meal!
