- Pour warm water (0.5 cup) into a deep bowl, add sugar (15 g) and crushed pressed yeast (40 g).
- Mix all the ingredients to get a homogeneous mass, and leave the dough in a warm place for about 15-20 minutes. During this time, yeast in a warm environment is activated. Water temperature should be 35-39 degrees, but not higher, otherwise the bacteria will die. This should always be remembered when it comes to making yeast dough.
Fluid base
- To do this, you will need a large and deep dish, in which it will be convenient to knead the dough in the future. Drive one chicken egg into the prepared dishes, the second protein and mix with a whisk. Yolk is needed to grease the cakes before baking.
- Add salt (0.5 tsp), vanilla sugar (1 sachet), remaining sugar (85 g) and mix thoroughly to dissolve the ingredients.
- Then add warm milk (250 ml), melted margarine or butter (100 g) and mix all the ingredients again well.
- Pour dough into a liquid base and mix gently.
Kneading dough
- Sifted flour (approximately 5 stacks) is gradually added to the liquid base and mix well. At first, this can be done with a spoon or a whisk, as you wish. When the mass becomes thick, it is better to continue kneading by hand. The resulting dough should stick to your hands, but separate from the bowl.
- Next, you need to grease the working surface with vegetable oil (about 1 tbsp.), Put the dough and continue to knead it with your hands. If necessary, you can use a little more oil. If the dough continues to stick to your hands, you can add a little more flour, but the main thing is not to overdo it so that it does not turn out tough. The finished dough should be soft and elastic.
- Put the dough in a large and deep bowl, cover with cling film and leave in a warm place for 60 minutes. In the warm season, you can safely leave the bowl on the table, in the cold - you can wrap it in a warm towel or put in a heated oven.
- The basis for pies should increase by 2-3 times. Once this has happened, you can begin to prepare the pies.
Pies
- Rinse fresh cherries with pits (300-400 g) in water, put in a bowl, add starch (2 tbsp. Without a slide) and mix thoroughly so that it spreads over the entire volume.
- Cover the baking sheet with parchment paper. You can also grease it with vegetable oil so that the finished pies do not exactly stick.
- Grease the hands with vegetable oil, knead the dough and divide it into equal parts and make balls out of them. It should turn out about 20-22 pcs.
- Roll out each piece with your hands, put in the middle (5-6 cherries) and carefully cover the edges.
- Gently press the resulting seam to make a pie, and put it on the prepared baking sheet.
- Formed pies on top, cover with a paper towel and leave for 15-20 minutes, so that they are insisted and slightly fit.
- Beat the remaining yolk with a fork, add milk (2 tbsp.), Mix well.
- Brush every pie. Send the baking sheet to the oven, preheated to 180-190 degrees, and bake for 25-30 minutes.
- Ready cakes can be sprinkled with powdered sugar on top, but this is optional. Have a nice tea party!
