Do not buy ready-made pieces of fish in packages. Firstly, you don’t know whether the fresh carcass was packed there. Secondly, the degree of its salting can vary significantly from your preferences. If you buy salmon for the holiday, so fresh. Ideally, if the fish is only partially stripped: it is sold with its head and tail. - fish weighing about 2 kg;
- coarse sea salt - 100 g;
- sugar - 50 g.

- With a sharp knife, cut the carcass from the side of the abdomen, make several incisions along the spine, being careful not to damage the skin on the back. Remove the spine, clean the abdomen. Rinse the fish with cold water and pat dry.
- Combine salt and sugar in one container. It is advisable to use salt of different grinding: medium and large, to achieve uniform salting of fish. Pour the carcass with the mixture from the inside, curl the edges, salt on the side of the skin. If the carcass weighs more than 1.5 kg, make cuts on the skin.

- boiled egg - 3 pcs.;

- Make a dressing: mix the forked yolks with vegetable oil, lemon juice, mustard and a clove of garlic. Salt and mix well.
