Step cooking
- To prepare the dish, you need 4-5 onions, but we don’t need the vegetable itself, but only the husk in which the fish will be cooked. We rinse it first with the onion, then peel it, put it in a bowl of water and rinse thoroughly again so that there is no dirt on it. We put the washed onion husk in a small pan and fill it with a liter of water. Let her stand for 10-15 minutes.
- We begin to prepare the fish. It is recommended to wrap the board in a plastic bag and wrap it on top with a paper towel so that the board does not absorb fish smell. We cut off the head of a mackerel. We make a deep incision from the abdomen and take out all the insides. Using a knife, carefully scrape off the black film that remains on the belly. If this is not done, then the fish will have a bitter aftertaste.
- We rinse the mackerel inside and out, and dab it with a paper towel to remove excess fluid. Similarly, we cut the second fish.
- We cut each mackerel into pieces of 2-2.5 cm in size. You can cook the whole fish, but then it will not be so convenient to serve and divide into portions.
- In water with onion husks add 4-5 tbsp. l salt. It is important to salt the fish well - since it does not cook much, it needs to absorb more salt. But do not overdo it so that the fish does not turn out to be excessively salty.
- We put the pan with onion husks on the fire and wait for the water to boil. After boiling, prepare the brine for 2 minutes.
- In boiling water we put pieces of mackerel or a whole fish and boil exactly 3 minutes.
- Turn off the fire and drain the water through a colander. We select the finished fish from the husk and put it on a beautiful dish. If you like sour fish, sprinkle mackerel on top with lemon juice.
- Serve the mackerel on the table, decorating with fresh herbs, for example, a sprig of dill or parsley. It is also possible to cut onions into thin rings and arrange them nicely on a plate with mackerel. You can eat fish hot or cold.
