Step cooking
- For cooking, you will need 4 mackerel fillets. But in few places you can buy the fillet of this fish, so you can use 2 whole mackerels, which we cut ourselves. First, open the belly, remove all the insides and thoroughly rinse with water. We make a deep incision on the back and all over the abdomen. We begin to separate the fillet from the tail along the ridge. Similarly, remove the second filet. Using a sharp knife, carefully cut off the remaining large bones. Small bones can be removed using tweezers. From 2 mackerels, 4 fillets are obtained, which we will cook in batter.
- We proceed directly to the preparation of batter. In a deep bowl pour 4 tbsp. l flour. Sifting it is not necessary. Add to your taste hops-suneli, spices for fish, a pinch of ground black pepper, and add salt. If you like the garlic flavor, you can add a pinch of granulated garlic to the flour. All the ingredients are thoroughly stirred with a tablespoon.
- Pour 200-250 ml of beer into the flour, which is a good baking powder. Do not worry that after cooking an unpleasant aftertaste of alcohol will remain. Beer will add mackerel in a batter of bread flavor and piquancy. Stir the beer thoroughly with the rest of the products.
- For the dish you will need 2 chicken eggs. In a separate deep bowl, separate the squirrels from the yolks. Add the yolks to the flour and beer, stirring a little.
- Protein is slightly salted, add a pinch of sugar and beat with a mixer or whisk until a thick foam forms.
- Beat the mixture with flour, beer and yolk using a mixer.
- We dry each mackerel fillet with a paper towel to get rid of excess moisture.
- Slowly add whipped proteins to the beer mixture. We mix the batter with a spatula to a homogeneous state, while not rushing.
- Cut the mackerel fillet into pieces of 2-2.5 cm.
- We put the pan on the fire and pour half a glass of sunflower oil. The amount of vegetable oil may vary depending on the size of the dishes in which you will fry pieces of mackerel. If there is, then it is better to use a deep fryer or stewpan so that the fish is completely coated with oil.
- When the oil warms up well, we stick one slice of mackerel on the skewer after another, completely dipping into the batter and putting it in the pan.
- Fry for several minutes on each side. Put the prepared pieces of fish on a dish covered with a paper towel that absorbs excess fat. Periodically change the towel.
- Serve mackerel in batter with sour cream sauce. To prepare it in a deep bowl, mix 2 tsp. sour cream with a hill with finely chopped dill. The sauce is peppered to taste and granulated garlic is added. All ingredients are mixed. Serve to the table with mackerel in batter.
