Step cooking
- Clean the fish from the insides, remove the black film, use a knife to cut out the gills and rinse the fish well under running water. Dry the mackerel with a paper towel.
- Before baking fish, it must be marinated. Salt and pepper the fish on all sides and inside to taste. Sprinkle with dry garlic. It has a less pronounced smell of garlic, but if you prefer a more piquant taste, use fresh chopped garlic.
- Then cut the lemon in half and pour the mackerel on all sides and inside the juice of half the lemon. Put the fish in a plastic bag and pour the juice of the second half of the lemon. Squeeze the juice well so that the fish is sufficiently marinated in it. Lemon juice neutralizes the smell of mackerel, and its meat will become white and tender. If you don’t like the lemon smell and taste in the fish, replace the juice with wine vinegar, or just rinse the pickled fish well under cold water.
- Peel one small onion and cut into half rings. Add onions to the fish, including the inside. Tie a bag tightly and send the fish in the fridge to marinate for at least 2 hours, and more if you want.
- Meanwhile, prepare the vegetables for the vegetable pillow under the fish. Peel 3-4 potatoes, one carrot and one bell pepper, rinse the vegetables under water. Then remove the fish from the refrigerator and, if desired, rinse slightly so that it is not acidic from the lemon. Tear off the desired piece of foil and lightly grease it with vegetable oil.
- 3-4 potatoes cut into circles and spread evenly on the foil, slightly add salt. Put the mackerel on the potatoes. Cut the carrots into circles and put inside the fish, cut the pepper into rings and also put inside. On top, lightly grease everything with vegetable oil and wrap the foil. Cover the baking sheet with foil and put the wrapped fish on top.
- Preheat the oven to 180 ºС and send the fish to be baked for 20-25 minutes. After this time, open the foil so that the mackerel is browned and bake for another 10 minutes.
Optionally, before baking, mackerel can be greased with mayonnaise or sprinkled with grated hard cheese. And in the process of pickling, you can use any spices suitable for fish at your discretion.
Ready fish with vegetables can be laid out on a salad leaf and sprinkled with finely chopped greens, and on the side put a slice of lemon.
