Fish preparation
- Mackerel is easier to clean when it is not yet fully thawed, because the meat of the mackerel is loose. If you clean it completely thawed, you can ruin its "presentation", that is, damage the flesh.
- Carefully, so as not to damage the insides, we cut the abdomen of a mackerel, starting from the tail, and cut almost to the end.
- Now gently pry a finger and begin to take out the insides, trying to take out the gills along with the insides. In the end, it takes some effort.
- Next, thoroughly wash the fish under running water. After this, it is necessary to remove the black film, which is located inside the mackerel, because it can produce bitterness. To do this, gently using a knife with scraping movements, we begin to clean it, and then, prying off with your fingers, easily remove it.
Cooking a dish
- We clean and wash two onions. My 2-3 medium tomatoes. We cut onions and tomatoes into rings.
- A small piece of my ginger and cut into rings.
- Thinly cut half a lemon.
- Sprinkle peeled and washed mackerel on both sides with ground pepper and salt to taste. We cut into portioned pieces, but not to the end, but so that the fish is kept in heaps.
- Cover the foil on a baking sheet and carefully spread the whole fish on it.
- In the middle we spread the pieces of butter. Between portions of fish we put onion and tomato rings. Between the fish we spread the pieces of ginger.
- We circle both fish with lemon circles. Top grease with vegetable oil.
- Wrap to the center of the edge of the foil.
- We clean the potatoes and wash them. Cut it into slices.
- We add. Sprinkle with seasoning for potatoes. The composition of this seasoning includes ground red paprika, marjoram, savory, ground black pepper, dried ground onions, turmeric, thyme, dried dill greens. Basil and dried garlic also go well with baked potatoes. But you can take spices and seasonings to your liking.
- Pour potato with vegetable oil, mix well. On the second part of the baking sheet, not occupied by mackerel, cover the foil, slightly tuck the edges and spread the potatoes. We spread the potatoes in one layer, leveling it with a fork.
- We send fish and potatoes to the oven, preheated to 200 degrees. After 45 minutes, we remove the potatoes and fish from the oven.
- On a glass plate, put the mackerel with baked vegetables and lemon, bending it with an arc. In the center we spread the potatoes with a crisp. Garnish with pre-washed and dried parsley branches.
