Step cooking
- To begin, we disassemble the fish. If you use a frozen carcass of a mackerel, it must first be thawed in the refrigerator naturally, without using a microwave or hot water. After defrosting, cut the belly of the fish and remove the insides. We rinse under running water. We make an incision just below the fin, unfold the knife towards the tail and cut the fillet. We carry out the same sequence of actions on the other hand.
- In the center of the fillet, cut out the main bones, and also remove the costal bones.
- After this, cut the fillet into portioned pieces. We do the same with the other fish.
- Spread chopped mackerel in a bowl. Add 1 tsp. salt, 1/2 tsp sugar and juice of one lemon, filtered through a strainer.
- Mix thoroughly.
- Next, peel and chop the vegetables. Chop the onion into quarter rings.
- Cut carrots and bell pepper into strips.
- At the bottom of a liter jar, put 4 bay leaves and lay out layers of carrots, onions, peppers, black peppercorns and mackerel. Then we repeat again.
- Pour vegetable oil on top. To give a special taste, you can use olive, but sunflower is also suitable.
- We cover the jar with a metal lid for preservation, having previously removed the gum from it. After that, put the jar in the oven and heat up to 180 degrees.
- As soon as the contents boil, lower the temperature to 150 degrees and leave to simmer for 1 hour.
- Cool completely in the oven. This dish can be eaten both warm and cold. Enjoy your meal.
