Step cooking
- Before stewing, mackerel must be marinated. So it will turn out even juicier, and therefore tastier. If you use a frozen carcass of mackerel, you must first thaw it. It is advisable to do this in a natural way, not using a microwave or hot water. Remember that fish and meat products are best defrosted in the refrigerator, not at room temperature. After the fish has thawed, it needs to be cleaned, namely to get rid of the head and entrails. You can also immediately remove the fins and tail. Next, thoroughly wash the fish carcass, remove excess moisture with paper towels and cut into portions.
- Fish must first be marinated. To do this, put the chopped pieces in a deep bowl, lightly salt and add seasoning for the fish. Mix well and leave for about 1 hour.
- While the fish is pickling, we prepare the necessary vegetables. We clean 1 medium-sized onion and cut into half rings.
- Grate 1 small carrot on a medium grater.
- We clean the red bell pepper from the cuttings and seeds and cut into strips.
- Peel the young zucchini and cut into rings.
- Two tomatoes cut into slices.
- Pour a small amount of vegetable oil onto a preheated deep frying pan and put chopped onions, carrots and peppers on it. We give the vegetables a little stew, periodically stirring with a spatula.
- After the vegetables are a little stewed, add the sliced zucchini and tomato slices to the pan. Cover, reduce heat and leave for 5-10 minutes.
- Next, lay the pieces of fish on a vegetable pillow. Cover and leave for 5-10 minutes over medium heat.
- When the fish warmed up properly and began to stew, add a little salt water and leave for 5 minutes.
- After the vegetables and fish have been stewed properly, put the finished dish on a plate. Before serving, mackerel with vegetables can be sprinkled with chopped herbs or garnished with a sprig of dill, parsley or cilantro.
