Step cooking
- We mushrooms mushrooms collected in the forest in an amount of about 5-6 kg, we sort out, remove excess debris, and clean from undesirable fractions. We wash the mushrooms under running water, place in a large pot or basin, pour clean water so that honey agarics are covered with water. We put on the fire. Bring to a boil and cook for five minutes.
- After five minutes, turn off the fire and begin to filter the mushrooms to remove the dirty water in which they were boiled for the first time.
- To do this, put a colander in the sink, with the help of a small saucepan, pick up the mushrooms along with dirty water and pour into a colander. Water drains, and the mushrooms remain in a colander. We put honey mushrooms in a separate pan.
- Then we alternately place the mushrooms in portions in a separate container, fill them with cold water, rinse thoroughly again, decant the water through a removable colander. We repeat this procedure two to three times until the water becomes completely clean.
- When all the mushrooms are washed, put them in a pan. If the number of mushrooms is quite impressive, they can be divided into two pots for convenience and quick cooking. Pour mushrooms with clean water, send to the fire for a second cooking. We close the pots with lids in order to boil faster. After honey agarics boil, cook them for 25-30 minutes on medium heat.
- After a half-hour boiling, filter the mushrooms again through a colander, as after five minutes of boiling, rinse with cold running water, put in a separate container. My mushrooms, too, several times, until the water becomes completely clean. After that, the mushrooms are ready for use.
Useful Tips
- Forest mushrooms must be carefully cooked in two stages and washed under running water until sterile.
- After honey mushrooms are properly processed in this way, you can safely cook any dishes from them: fry with potatoes, marinate, cook mushroom caviar, and place in a freezer for long-term storage. All bad additives and substances in the process of boiling have already disappeared, so mushrooms can be safely consumed.
