Step cooking
- Rinse beef tongue thoroughly under running water. In a deep bowl, draw a little warm water and place the tongue in it. Leave it to soak for 30-40 minutes. Some cooks practice soaking the tongue in milk. From this manipulation, the meat becomes even more tender. After soaking, rinse the beef tongue under running water and rub it thoroughly with a metal brush or knife, scraping any remaining dirt from the tongue.
- After that, draw water into the pan and bring it to a boil. Send your tongue into boiling water. Salting it is not necessary yet. Leave the tongue to simmer for two and a half hours over medium heat.
- After this time, add a tablespoon of salt to the pan. Cook another 20 minutes. When 20 minutes have passed, draw cold water into a deep bowl. Remove the pan from the heat and transfer your tongue into this bowl with a slotted spoon. This is done so that the tongue is cleaned well.
- When the tongue cools down, put it on a cutting board.
- Using a knife, remove the upper skin from the tongue. If you come across an excessively fat tongue, remove excess fat with a knife, scrape it slightly and rinse under running water.
- If you are going to keep the tongue for a while, then put it in a pan with broth - so it will retain its juiciness. The tongue is properly boiled. Now it can be used for further preparation of salads or appetizers. Enjoy your meal!
