Step cooking
- Rinse thoroughly 700 g of beef and put it in a pan.
- Pour 2 liters of water and put the pan on the fire. Carefully remove the resulting foam with a slotted spoon.
- When the foam ceases to form, close the pan with a lid and cook the broth over low heat until the meat is almost ready. After about an hour, you can start preparing vegetables. Cut 200 g of onion into small pieces. 200 g of carrots are cut into small sticks obliquely.
- Pour the carrots with onions into a boiling broth.
- Peel 400 g of potatoes and cut into large cubes, cutting the potatoes into 4 pieces along.
- Sweet pepper in the amount of 3 pieces is cut into large pieces.
- Peel 400 g of tomatoes and also cut them into large pieces.
- After the onions and carrots are boiled in the broth for about half an hour, put potatoes, tomatoes and bell peppers in the pan.
- We make the fire strong and bring the shurpa to a boil. Then pour 1 tsp. ground coriander. Add to the taste of hot chili pepper flakes. After that, make the fire minimal, close the pan with a lid and cook for another half hour. Finely chop 2 cloves of garlic and dip it in a saucepan. Add salt to taste, mix well. Remove the pan from the heat and let the shurpa brew for 10-15 minutes.
- We spread the shurpa on plates and sprinkle with parsley and basil.
