Step cooking
- In a small saucepan, heat 160 ml of fat cream (33-35%) to a temperature of 80-90 ° C. Break 200 grams of dark bitter or milk chocolate into small pieces. Place the pieces in a deep bowl or bowl. You can take chocolate in the form of a tile or figured: drops, drops, coins, or another shape. Pour the crushed chocolate with hot cream, wait 4-5 minutes.
- Add 50 ml of orange liquor to the bowl, which adds flavor to the dish. Instead of orange, you can take chocolate, coffee, vanilla or any liquor you like. You can use other aromatic alcohol: cognac, rum, tincture on anise and licorice patis, brandy, mastic (Bulgarian alcohol with anise flavor), whiskey, different liquors. In addition to a pleasant aftertaste, alcohol mousse will be more airy. Mix the mass with a mixer with a whisk nozzle until the chocolate is completely dissolved. If the latter is poorly soluble - apply a water bath.
- Divide 4 chicken eggs into proteins and yolks. For cooking, take the freshest, pre-washed eggs. With a mixer, beat the yolks with 2 tablespoons of powdered sugar into a white fluffy mass. Instead of powder, you can take fine granulated sugar. In this case, beat until complete dissolution of the sugar.
- Beat the squirrel with a mixer with a whisk in a strong foam, to persistent peaks.
- Pour the whipped yolk mass into a deep bowl with a chocolate-cream mixture, mix with a whisk until the composition is homogenized.
- Put half the whipped proteins in the bowl. With a spatula, carefully mix both masses in one direction, from the bottom up, until smooth. Add the second half of the whipped protein, repeat the stirring. It is necessary to stir carefully and slowly so that the mass does not lose airiness.
- Transfer the mousse to a pastry bag. Arrange the dessert in a bowl or dessert glasses (4 pieces). Refrigerate for 2-3 hours.
When serving, decorate the sweet with whipped cream, cream, fresh berries, coconut, or other culinary decor.
