- We rinse 1 glass of raisins under running water, pour it into a deep container, pour boiling water and leave.

- Pour 0.5 liters of milk into a liter pan and heat on a low heat until warm. Pour warm milk into a deep container, add 1 tbsp. l sugar and 50 g of yeast, then stir with a tablespoon until the yeast dissolves.
- Pour 200 g of flour into the yeast mixture and stir with a spoon. If the dough turned out to be liquidy, add another 100 g of flour, until we get the dough, like pancakes. We cover the container with a dish of cloth with a kitchen towel and put in a warm place for 30-40 minutes to lift.
Report to the dough
- Break 4 eggs into a deep container and beat them with a mixer or food processor in a stable foam. Add 260 g of sugar to the egg mass, 2 tsp. vanilla sugar and beat all about 10 minutes until the crystals are completely dissolved.
- We wash 1 orange under running water, after which we rub the top layer of the peel on a fine grater to make a zest.
- We cut the orange into 2 halves and with the help of a citrus juice squeezer squeeze the orange and pour the juice into a deep bowl. Melt 200 g of butter in a deep bath in a deep bowl, and 200 g of chocolate with 30 g of butter in a deep water bath, stirring to obtain a homogeneous mass. Strain the steamed raisins and squeeze it slightly with your hands to remove excess water.
Dough
- When 30-40 minutes have passed, pour warm melted butter into the risen dough, add steamed raisins, orange juice, zest, 40 g of almond flakes and beaten egg mixture, then mix thoroughly with a silicone spatula. Pour 1 kg of flour into the dough and mix thoroughly with a spatula until a thick, viscous mass is obtained.
- Water the dough on top of 1 tbsp. l sunflower oil and stir with a spatula. Add 2 tbsp. l of melted chocolate on opposite sides of the dough, with a spatula we push it several times into the mass, then turn the dough over, add the rest of the chocolate there and mix lightly to make the dough marble.
- We shift the dough into an 8-liter pan, cover with a cloth towel and send it to a warm place for about 1 hour, so that it rises to the top of the pan as much as possible.
Kulichi
- Turn on the oven at 50 ° C and leave to warm.Cover the bottom and sides of Easter cakes with parchment paper.
- Mix the dough a little to precipitate, and place it with your hands in the mold, placing it so that it takes a little more than half of the molds.
- We send cakes for raising in the oven until they rise to the very top. We increase the temperature to 160-180 ° C and bake the product for 30 minutes. After 30 minutes, we check with a wooden skewer whether the cakes were baked, and if the splinter is dry, remove the molds from the oven and let them cool for 10-15 minutes. If the skewer is wet, leave them in the oven for another 10-15 minutes, and then pull them out of the oven.
- We take out cakes from the form and leave to cool for 6 hours without removing parchment paper.
Decoration
- Melt in a water bath 250 g of chocolate with 50 g of butter, stirring it until a homogeneous mass is obtained.
- Evenly apply a tablespoon of chocolate cake to the cakes on top, sprinkle each with 1 tbsp. l almond flakes, and let the products stand for about 24 hours.
- After a day, we cut the cake into portions, put it on a dessert plate and serve.
Important! While the cakes are raised and baked in the oven, do not open the door so as not to “catch a cold” of the dough, and then you will get lush high items.
