Step cooking
Bake cake
- In 100 g of wheat flour add about 30 g of sugar, mix.
- Grate 50 grams of cold butter on a coarse grater. Grind these ingredients into crumbs.
- Put the friable base in the baking dish and evenly distribute along the bottom, slightly tamping. Put the mold in the refrigerator.
Preparing the fill
- Finely chop 140 g of milk or weak black (50% cocoa) chocolate.
- Pour crushed chocolate with 150 grams of hot milk. Leave for a couple of minutes.
- When the pieces have melted, mix the mass well until smooth.
- To three packs of soft cottage cheese 180 g each add milk-chocolate shake cooled to room temperature.
- Pour in the same 180 grams of sugar.
- Beat the curd mixture thoroughly with a blender. Sugar should completely dissolve, and the curd mass should become completely homogeneous.
- Add 2 tablespoons of potato or corn starch and 3 tablespoons of cocoa powder. Stir so that there are no lumps.
- Beat 3 eggs and put 200 grams of sour cream, beat with a mixer.
- Get the mold out of the refrigerator, make a foil plate on the outside so that the filling does not leak.
- Pour the whole chocolate-curd mixture onto the cake. Put the cake to bake.
- Set the electric oven to 200 degrees Celsius for 15 minutes. Then reduce the temperature to 110 degrees and leave to cook for 70-80 minutes.
- After the specified time has passed, allow the cheesecake to cool, leaving it in the oven with the door ajar. And then send in the refrigerator for several hours, preferably at night.
The stage of cooking ganache
- This top layer of dessert should be prepared immediately when 4-8 hours have passed. Break a little more than half a bar of chocolate (60 grams) into small pieces, add 20 grams of butter to them.
- Send a bowl of these two foods to the microwave to melt. Every 20 seconds you need to mix until you get a homogeneous mass.
- Add 2-3 tablespoons of warm milk and stir.
- Cover with a ganache cake and put in the refrigerator for 10 minutes.
- After the specified time, walk with a thin sharp knife along the sides, remove the form.
