- Break chocolate into small pieces. Both milk and black will do. It is best to take high-quality and proven brands, because when melted, poor-quality chocolate can be divided into layers, and the cake will not rise. This is due to the fact that unscrupulous manufacturers do not use natural cocoa products, but other vegetable fats and cheap cocoa powder. Butter (40 g) is also cut into pieces and spread in a saucepan with a thick bottom. We put on the stove and start to melt. Add the pieces of chocolate to the butter and melt in a water bath. Do not forget to constantly stir the creamy chocolate mass.
- Separate the yolks from the proteins and transfer them into separate containers. Beat whites until lush foam. To do this, you can use a whisk, mixer or hand blender.
- Add 10 g of icing sugar to the yolks and also beat until bubbles appear. First add whipped yolks to the chocolate mass and mix thoroughly.
- Then spread the whipped proteins and beat everything until smooth. Next, add flour to the stewpan and again thoroughly knead everything until smooth. The whole mass in consistency should resemble thick sour cream.
- Melt 10 g of butter and grease the muffin pan with a silicone brush. After that, lightly sprinkle them with flour or powdered sugar. You can also bake in heat-resistant cups or ceramic tins.
- We spread the chocolate and cream mass into molds, filling them in about 2/3. Preheat the oven to 180 degrees.
- Put the form in a well preheated oven and bake for 7-8 minutes. Please note that the cupcakes are very tender, so they must be taken out of shape very carefully so as not to damage. Sprinkle the finished muffins on top with powdered sugar. Serve hot preferably. If desired, dessert can be served by decorating it with berries and mint leaves.
