Ingredients
- Beef Brisket - 3 Ribs
- Celery Root - 2 pieces 4x4x4 cm
- Carrots - 0.5 pcs.
- Onions - 1.5 pcs.
- Sour cabbage - 300-400 g
- Tomato paste - 1-2 tbsp. l
- Garlic - 2 cloves
- Parsley - 2-3 branches
- Green onion - 5-7 feathers
- Flour - 1-1.5 tbsp. l
- Black peppercorns - 7-8 pcs.
- Bay leaf - 1-2 pcs.
- Puff pastry - 0.5 kg
- Salt to taste
- Egg - 1 pc.
- Sesame seeds to taste
Step cooking
- Put the beef brisket (3 ribs) into the pan, fill it with cold water and set the broth to boil. When the foam begins to stand out, remove it. After the foam ceases to appear, we make the fire minimal.
- Set the pan on fire and put on it (dry) 2 pieces of celery root (4x4x4 cm) with a slice down. Half the carrots are cut in half and also put in a pan. We cut a small onion in half and put into slices in a frying pan. Vegetables should be well baked.
- In another pan, spread 300-400 g of sour cabbage. Pour a little water into the cabbage - about the level of the cabbage.
- Add 1-2 tbsp. l tomato paste, simmer over low heat. If the water evaporates, you can add a little. Stew to a very soft state of cabbage. Finely chop the half of the onion and send it to the pot with cabbage.
- Baked vegetables put in a pan with broth. Finely chop 2 cloves of garlic. Finely chop 2–3 branches of parsley and 5–7 feathers of green onions.
- We take out the finished meat from the broth. We extract vegetables from the broth. We transfer the ready cabbage to the broth.
- In a cup we put 1-1.5 tbsp. l flour and pour a little water - about 100 g. Stir. Pour water and flour into the broth, constantly stirring. Salt the broth to taste. Add 7-8 peas of black pepper. We put 1-2 bay leaves. Cut the meat into small slices and place it in the broth, bring to a boil. Pour soup into portioned pots. Sprinkle with greens and garlic.
- On a table sprinkled with flour (1-1.5 tbsp. L.), Put 0.5 kg of ready puff pastry. Break the egg into a bowl and beat it slightly with a fork. From the dough we cut circles with a diameter larger than the diameter of the pot.
- The edges of the circles are greased with a beaten egg. We close pots around the dough, “sticking” them around the edges.
- Sprinkle sesame seeds on top. Set the pots in the oven, heated to 200ºC. We take out the pots when the dough is browned.
