Step cooking
- We clean 700 g of onions, wash them and cut them into half rings. Grind one third of the total amount in a blender or scroll through a meat grinder to a mushy state.
- The remaining onion half rings are folded into a deep bowl and pour boiling water for 10 minutes.
- Throw the scalded onion in a colander, wait until the water drains. Put the half rings in a bowl, top with a free 3 tbsp. l vinegar, add 1 tbsp. l sugar, add. All mix well and set aside.
- Wash the pork pulp (700 - 800 g) and dry it with paper towels. In addition to pork, veal, lamb or even chicken is suitable. The layers of fat will not be an obstacle, but on the contrary, will make the finished dish more juicy. Cut the pork into small cubes and put it into a deep container. There we add the onion, chopped on a blender, salt, pepper, season to taste with coriander. A suitable size of meat cubes is 4-5 cm. If cut less, then the meat can turn out to be dry.
- We mix the future kebab well, cover the container with a lid or film - and put it in a cold place. In order to marinate, meat needs at least 2 hours. If you want, you can leave everything for the night, and already in the afternoon start cooking.
- At the bottom of a deep baking sheet or heat-resistant pan, spread the pickled onions. Before spreading, salt the liquid formed from it.
- On the onion pillow lay the meat pieces. Evenly distributed over the size of the tank.
- We cover everything well with foil and put it in the oven, heated to 180 degrees. Careful covering with foil does not allow steam to go out, makes the meat juicy and soft. Therefore, be sure to press the foil before sending the dish into the oven.
- After an hour, we take out the dish and remove the foil. For the appearance of a golden crust, increase the temperature to 200 degrees and again put everything in the oven.
- After half an hour, the delicious tender meat on the onion pillow is ready. Serve hot and enjoy real homemade barbecue.
