Marinade cooking
- Cut into large pieces 1 - 1.5 kg of pork collar. Put the chopped meat in a bowl and sprinkle it with plenty of salt. Squeeze the juice out of 1/2 of the lemon, pour the meat on it.
- Sprinkle 1 tbsp. l seasoning that you like. You can take a ready-made seasoning for barbecue, you can mix several different seasonings in this dish and evenly fill them with meat.
- Pour 1/2 cup of beer. If you will give barbecue to children, beer can be replaced with kefir, milk, tomato juice, sparkling water, etc.
- Mix everything thoroughly with your hands, as if squeezing the contents into the meat.
- We cut 2 - 3 onions with wide rings, we do not separate the rings. Add to the meat. It is advisable to put the meat with marinade under the press, although this is not necessary. We put in the refrigerator for 2 hours.
BBQ cooking
- After the indicated time, we alternately string pieces of meat and onion rings onto wooden skewers. It is wooden skewers made from fruit trees that add an extra flavor to meat. So that they do not start to burn in the oven, hold them in water for 20 minutes before stringing.
- The remaining marinade after meat can be poured onto the bottom of the can. To give the barbecue a smoke flavor, you can pour 1 tbsp. l liquid smoke. Or, as an option, make a coal from a burnt piece of wood and put it on the bottom of the can. When heated, the coal will give its smell. Place the barbecue in a 3-liter jar. We don’t stuff them strongly into the jar, we leave some distance for more air circulation. If all the kebabs do not fit - it is better to take another jar. Ideally, when the bank has 4 - 5 skewers.
- Cover the jar tightly with foil. You can make a puncture in the foil to release steam.
- We put in a cold oven so that the jar in the hot oven does not crack. It is advisable to put the jar on a wire rack so that uniform heating occurs both above and below. Turn on the oven at 200 - 220 degrees. Barbecue jar will gradually heat up along with the oven. Bake for 1 hour.
- After turning off the oven, do not immediately open it, let it cool down gradually for 15 - 20 minutes. Otherwise, due to a sharp temperature drop, the bank may burst.
- We take out the prepared kebab from the jar, put it on a plate.
It turned out tender, soft, flavorful meat. It can be served with tomato sauce, adjika, fresh tomatoes or cucumbers. It will suit any side dish.
