Step cooking
- Rinse and dry the meat thoroughly. Remove anything unnecessary from it - small bones, tendons, films, etc. The presence of fat is allowed, but do not leave too much. Cut the meat into large pieces. Remember that in the jar you will fit either three or four skewers. 4 pieces will fit on each skewer. From here, and calculate how you cut the meat into identical portions, and that was 12 or 16 pieces.
- Peel and rinse the onion. 200 g of onion - this is approximately (depending on the size of the bulbs) 2-3 pcs. In any case, the onion will not be superfluous, so if you do not have weights, feel free to clean 3 onions. Cut the onion into half rings. Put the chopped onion in a deep bowl and mash it well with your hands.
- Pour 1 tsp. salt, 1 tsp black pepper, 1 tbsp. l lemon juice and 1 tbsp. l mustard. Stir together with onions and mash well.
- Put the meat in the onion and mix well again.
- Cover the bowl and refrigerate for 2 hours to marinate.
- After two hours, start preparing for baking. Prepare long skewers, a three-liter jar. Do not turn on the oven (unlike any pastry, here you first put the cans in the oven and only then turn it on). Pour 120 g of raw rice into the bottom of the jar - it will protect the jar from the risk of bursting, in addition, this is an excellent side dish to the barbecue.
- Cut 100 g of smoked bacon into thin slices - it will give the meat a smoked flavor. You can now string meat on a skewer, alternating with chopped smoked bacon.
- Put the onion that has remained on the bottom of the jar (on the pic).
- Lower the skewers into a jar, break off the edges that stick out.
- Cover the neck of the can with foil, wrap it very tightly.
- Put in a cold oven and turn on at a temperature of 220 ° C. Bake kebab for 1 hour 15 minutes. After the specified time, turn off the oven and open it for another 15 minutes, the temperature will drop, and the meat will be cooked.
- Get the skewers (carefully, because the banks have very hot steam).
- Place the kebab with greens and vegetables (fresh or pickled). Garnish can be served rice from the bottom of the can.
Variant of marinade for barbecue on sour cream
You can cook another version of marinade on sour cream. It only changes what you add to the onions and meat, all other principles of cooking remain the same.
Ingredients:
- a teaspoon of ground black pepper;
- a teaspoon of table salt;
- 200 ml of 15% sour cream;
- 20 ml of vodka;
- ½ bay leaf.
