Step cooking
Liver preparation
- Cut 1 kg of liver into slices for stringing on a skewer. It is advisable to choose the liver without veins and ducts, then the pieces will be smooth and not loose.
- Cut thin slices of 0.5 kg of fat. Its task is to give fat and give juiciness to the liver. If desired, the skin can be cut.
- String the liver on a skewer. Then string a piece of bacon. Alternate a piece of liver with a piece of bacon. Approximately string on 6 - 7 pieces. String not from edge to edge, but so that the pieces are in the middle, so that you can subsequently wrap them in foil.
- We spread the skewers with the liver on the grill, without waiting until all the firewood burns out. To prevent the fire from breaking out and preventing our barbecue from burning, always keep a bottle of water at hand to extinguish the flame in time. Turn over periodically so that there are no burnt parts.
- As soon as the liver and bacon are browned, remove from the heat. The task was to create a golden brown crust and give the smell of fire, smoke, fire.
Foil baking
- We put each skewer on a detailed sheet of foil. Put a piece of butter on top, about 10 - 20 g.
- Sprinkle with seasoning for barbecue. The composition of the seasoning includes salt, so it can be quite salty, do not overdo it. Add ground black pepper and ground paprika. All seasonings can first be mixed in one cup, and then sprinkled with barbecue.
- On the side of the barbecue we put a fresh green stalk of garlic. If desired, you can add onions, sliced in rings.
- Wrap the foil tightly so that the juice does not flow out of it. The result was a brilliant "sweetie."
- Wrapped skewers again put on the grill.
- After 30 minutes, the dish is ready. We remove from the fire. Expand the foil.
- We spread it on a dish decorated with lettuce. The liver turned out in its own juice, with a little fat. Easy to remove from skewers.
