Fish preparation
- Take two salmon steaks of 250 g. For baking, you only need fillets. Therefore, we cut the steak in half along the ridge, remove the skin, remove the bones.
- The resulting four pieces are shifted into a baking dish.
- Season 1 tbsp. l salt and 1/3 tsp pepper on both sides.
Cream filling
- Pour 300 ml of cream into a bowl.
- Add 3 egg yolks.
- Put 2 tsp. Dijon mustard.
- Pour 1 tsp. dried basil and 1/3 tsp freshly ground black pepper.
- Mix together with a whisk until a homogeneous consistency.
- Pour fish with this liquid. You can put one whole sprig of rosemary on the fish, it will give the fish a unique flavor.
Cooking fish
- We send the form to a preheated oven up to 180 degrees for 20 - 25 minutes.
- We take it out of the oven, put it on a dish. Sprinkle with finely chopped parsley.
Cooking secrets
- Fresh salmon is more suitable for cooking fish in the oven with cream sauce, but you can also cook it from frozen. But salted fish is not suitable for this at all.
- Whole salmon in a creamy sauce is not cooked. To do this, it is cut into steaks or portioned pieces. It is important that they are smooth and appetizing.
- You can use any cream to prepare salmon in a creamy sauce, but it will be more tender and tastier if you add cream with a higher fat content.
- Salmon cooks quickly enough - no more than 30 minutes. If it seems to you that the recipe indicates too short a time for cooking, you should not increase it, as this may make the dish less juicy.
- You can cook salmon without unnecessary additives. In this case, it is better to prepare a side dish for her.
- And having prepared it immediately with vegetables or potatoes at the same time, you can serve the dish without a side dish.
